Oops Mistake Pumpkin Cake


     
     I'm one of those people that never cared for the taste of pumpkin,  It seems the older I get, the more I like it.Pumpkin is in season, therefore,  It's only right that I create a recipe using pumpkin.  I started out making another recipe, until I realized I didn't have enough flour.  HCM to the rescue.
      This is kept in my kitchen for       emergencies.  This will be used a lot in my recipes. You'll learn to love having it around, I do !


NOTE : This cake has a light fluffy pudding texture; because of this, inserting toothpicks in the Center for testing doneness will not work with this cake.

Serves: 12 slices
Prep Time: 10 Min
Cook Time: 30 Min
Cooking Method: Bake

Ingredients

GATHER AND MEASURE ALL INGREDIENTS

**HCM (HOUSE CAKE MIX) mix of (1) box yellow cake mix and (1) box angel food cake.  Sift together in one tightly sealed container.


1 can Pumpkin Purée
2 medium eggs
1/2 c sugar
1/2   stick. Butter
1/2  HCM**
1/2  tsp  allspice 
1/2  tsp  nutmeg
1 dash Cardamom
1 T vanilla 
1 T baking powder
1/2 c milk
1/2 c flour  



Directions

HEAT OVEN TO 350 F .  Spray (1) 9inch cake pan with non-stick cooking spray.

 
🍴 Beat butter,  sugar,  in large bowl with eletric mixer on medium speed intil well blended. Add eggs and vanilla, mix well. 

🍴 Add pumpkin, allspice, nutmeg, dash of cardamom and milk.  Mix well.
 
🍴 Stir together; flour, baking powder, salt and ( HCM ). slowly add to pumpkin mixture until well blended.
 
🍴 Pour in prepared cake pan.
 
🍴 Bake 30 min. or until edges pull way from pan.

Let cool.

Meet Free Friday-Squash & Chickpea Stew





1 1/2 Cup basmati rice
1 tbsp olive oil
1 butternut squash, diced
1 red onion, diced
2 tbsp mild curry paste
300ml vegetable stock
4 large tomatoes, roughly chopped
400g can chickpeas, rinsed and drained
3 tbsp fat-free Greek yogurt
 handful spinach and coriander, chopped


Cook the rice in boiling salted water, as per pack instructions. Meanwhile, heat the oil in a large frying pan and cook the butternut squash for 2-3 mins until lightly browned. Add the onion and the curry paste and fry for 3-4 mins more.
Pour over the stock, then cover and simmer for 15-20 mins, or until the squash is tender. Add the tomatoes and chickpeas, then gently cook for 3-4 mins, until the tomatoes slightly soften.
Take off the heat and stir through the yogurt and coriander and spinach. Serve with the rice and some wholemeal chapattis if you like.

National Bologna Day. 10-24

     I never knew there was a "bologna day".  Well, I don't see why not.  One of my most favorite foods growing up was fried bologna sandwiches.  Not just any kind, it had to be burned around the edges. You know, almost with a "Crunch". Yes, I said burned , crispy, crunch!  I don't care how it sounds; it is good I tell ya.  I double dare you to try it.  


  Then there's the more Sophisticated ways of eating Bologna. (hiding its really bologna).  It works too....

  Don't forget the creative type....speechless (awesome) !


You want to get bologna, don't you?  I do.  I think I'll do a fried bologna sandwich for lunch. (Edges burned and crunchy.

Delicious Fluffy Fruit Dip



Ingredients

  • 7oz jar marshmallow cream
  • 6 oz cream cheese
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Directions

  1. In a bowl put marshmallow cream and cream cheese( at room temp), put in cinnamon and nutmeg. With mixer mix all together and you are done. Enjoy with fruit you have cut up. Bananas,apples, cherries, peaches, pineapple , grapes, kiwi .
      Can't get any easier than this.  This is a recipe that is Tried & True.  My family has enjoyed it for a long time.  So the next time you're asked to bring something to the party, bring " Delicious Fluffy Fruit  Dip, you'll never be asked to bring the chips again.

Fireman Bob's Marinated Ribeye Steak



Serves:  all

Prep Time:
Cook Time:

Ingredients

1 can(s)chipotle peppers - dice
2/3 ccocktail sauce
4 Tbspsteak sauce
oh yeah enough rib eye’s for everyone....

Directions

 Mix and place all in large zipper bag
Place Steaks in the zipper bag and gently massage the rib eyes making sure the meat is well 

coated... Refrigerate 1 to 3 hours 3 being the best...

 Leave on counter for 30 minutes before grilling... Salt and Pepper and brush on some olive oil before grilling... When steaks are turned over repeat salt and pepper and oil...

Amazed at the fear, but I have Ground Beef

    I know many people that are afraid of the kitchen.  I just couldn't understand why.  From my understanding it just down right intimidating.  I was told it's like stage fright or public speaking.  Well, having done both, I can truly say "you just have to jump in and start small.  I would'nt expect an actor to do Shakespear on there first stage appearence, or a student to address the entire school; having never practiced an unwritten speach. I promise, we will slowly get an understanding of the recipes, and become familiar with some of the language.

Crock Pot Pulled Pork BBQ Sandwiches Easy, Easy

      Crock Pot BBQ Pork

Ingredients

  • 14 oz can beef broth
  • 3 lb boneless pork ribs
  • 18 oz bottle bbq sauce
  • 2 pkg hamburger buns

Directions

  1. Pour the can of beef broth into slow cooker and add boneless pork ribs. Cook on high heat for 4 to 8 hours, or until meat shreds easily. (I cook 8 hrs, because I put it on before work, even w/ frozen pork and it's done when I get home).
  2. Remove meat from liquid. (I save the liquid for my homemade vegetable soup and put it in a bowl in the freezer) Using two forks, pull meat apart to shred it. It may not seem like it's working right away, but keep working at it and it will.
  3. Stir in the entire bottle of your favorite barbecue sauce (I use sweet, but use whatever is your favorite). Cover and cook on high for another 30 minutes or until completely heated through. Fill hamburger buns.

Easy Dinner for Beginners

     There are night even I (Enjoy Cooking) do not want to cook.  That's when it's time to get Inventive.  Everybody has a lazy night, mine is usually on a Thursday; I consider that "SCANDAL NIGHT".  Well, I have to admit; I was lazy last night too.  I ate Jimmy Johns.  It was good too.
     Enough of that, lets get down to business.  To night the menu was simple.  Pasta with Italian sausage and spices. 
               Serving for One (1)
  1 serving of Pasta (of your choice)
  1 Italian sausage link( take out of casing)
        * Olive oil to your taste

   *Chef Paul Prudhomme's herbal Pizza & Pasta Magic  (to taste " it has no salt)
                        Directions
* boil water for pasta ( you can do it )
Remove sausage from casing.
* Sauté in pan with no oil.
*  Add green peppers and onion.  Cook until meat is totally browned no pink should be present. 
* Add pasta in boil water for 7 min. Or until desired tenderness drain off water.
* combine pasta & meat
* top with olive oil & "Pizza & Pasta Magic" mix well

THE FAMILY SAYS TAYLOR LEFT HOME TO CATCH THE SCHOOL BUS AT 43RD AND PENNSYLVANIA; BUT HASN'T BEEN SEEN SINCE.
TAYLOR RECENTLY MOVED BACK TO GARY AFTER LIVING IN ARIZONA.
THE FAMILY IS ASKING ANYONE WITH INFORMATION TO CALL GARY POLICE.

This one is NOT mine. I found it years ago trying to give my mom a little taste down memory lane. She has always talk about the tea cakes and molasses cookies her mom gave the children in the morning before going to school. YOU CAN'T DO THAT THESE DAYS. A lot of the children had'nt had breakfast, parent working or just plain LACK OF FOOD. My mom always say, " when you know how to shop & cook, you can look in your kitchen an find something to put together and feed your family. You need to know how to do both. Ingredients

1 1/2 cbutter softened
2 csugar
2 mediumeggs
1/2 cdark molasses
4 1/2 call purpose flour
4 tspground ginger
2 tspbaking soda
1 1/2 tspcinnamon
1 tspclove, ground
1/4 tspsalt
1/4 cpecans chopped
3/4 csugar coarse

Directions

1
 In a large bowl, cream butter and sugar until light and fluffy.

 Beat in eggs and molasses.

 Cimbine the flour, ginger, baking soda, cinnamon, clove, and salt; gradully add to creamed mixture. Mix well.

Fold in pecan.

 Shape into 2 inch balls and roll in coarse sugar.

 Place 2 1/2 in. apart on ungeased baking sheets. 

Bake for 16-18 minutes or until tops are cracked

 Remove to wire rack to cool.

This is the Beginning

One year and four months ago I was diagnosed with stage four cancer.  It's been a hard road to try to read invent myself again.  I'm learning to accept my life for what it is now I've been told that I may not get a chance to go back to work.  I figure it's another feeling sorry for myself so I decided that I wanted to become a blogger, Besides I have to do something I'm here all day and empty nester.  

I've always enjoy cooking and I am a total foodie.  I spend a lot of time on food sites and I spend a lot of time in the kitchen.  When I became an empty-nesters I decided to take some classes in order to spend some time figuring out what it is that I really wanted to do.  The classes I decided to take were the public chocolate classes in Chicago, I enjoyed the classes and I enjoy working with and eating chocolate! Since food is my passion that's mostly what I'll be talking about I hope you continue to join me.
